A great recipe to use up extra zucchini, this yummy moist chocolate quick bread has a hint of pumpkin pie spice to add pizzazz. It makes a nice gift for those special people in your life, like teachers and neighbors, during the holidays.
Ingredients

1 coil

2 cbrown sugar, firmly packed

1 tspvanilla

3 cgrated zucchini

2chocolate, unsweetened squares, melted

4 call purpose flour

1 tspbaking soda

1/4 tspbaking powder

1 tspcinnamon

1 tsppumpkin pie spices

1/2 cwalnuts, chopped
How to Make Chocolate Spice Zucchini Bread
- Grease and flour (2) 8x4 inch loaf pans.
Beat eggs well; add oil and brown sugar, mixing thoroughly. Add vanilla, zucchini, and melted chocolate and beat well. - Mix together flour, salt, baking soda, baking powder, and spices. Add to zucchini mixture by spoonfuls, mixing well after each addition. Stir in nuts by hand until combined.
- Bake in loaf pans at 350 for 40-60 minutes. Cool in pans until loaves can be removed (10-15 min), then cool on rack.
