A great recipe to use up extra zucchini, this yummy moist chocolate quick bread has a hint of pumpkin pie spice to add pizzazz. It makes a nice gift for those special people in your life, like teachers and neighbors, during the holidays.

    brown sugar, firmly packed
  • 1 tsp
  • 3 c
    grated zucchini
  • 2
    chocolate, unsweetened squares, melted
  • 4 c
    all purpose flour
  • 1 tsp
  • 1 tsp
    baking soda
  • 1/4 tsp
    baking powder
  • 1 tsp
  • 1 tsp
    pumpkin pie spices
  • 1/2 c
    walnuts, chopped

How to Make Chocolate Spice Zucchini Bread


  1. Grease and flour (2) 8x4 inch loaf pans.
    Beat eggs well; add oil and brown sugar, mixing thoroughly. Add vanilla, zucchini, and melted chocolate and beat well.
  2. Mix together flour, salt, baking soda, baking powder, and spices. Add to zucchini mixture by spoonfuls, mixing well after each addition. Stir in nuts by hand until combined.
  3. Bake in loaf pans at 350 for 40-60 minutes. Cool in pans until loaves can be removed (10-15 min), then cool on rack.
