Chocolate Rice Pudding

4 cups milk
1/2 cup sugar
1 cup short grain rice
8 oz. bittersweet chocolate, grated
dash ground cinnamon


1Heat milk and sugar in large pan over medium low heat. When milk is boiling, add rice and simmer until rice is tender and milk has all been absorbed, about 25 minutes. Depending on the quality of the rice, you may need to add a little more milk during cooking or strain a little milk off the mixture when rice is cooked. Add three quarters or the chocolate and the cinnamon and stir until chocolate is melted. Remove from heat and pour into a deep serving bowl. Sprinkle with remaining chocolate and serve while still warm. Serves 6 to 8
