Ingredients
- - 12 oz. bittersweet chocolate
- - 1 cup butter
- - 1/4 cup grand marnier
- - 8 large eggs, separated
- - 3/4 cup sugar
- - 2 1/2 cups heavy cream
- - mandarin segments, to decorate
How To Make chocolate orange mousse

Step 1Melt chocolate and butter with the Grand Marnier in a double boiler over barely simmering water. Set aside to cool. Beat egg yolks and sugar until mixture falls in ribbons. This will take about 10 minutes. In a large bowl, mix the chocolate with the egg mixture. In another bowl, beat the egg whites until stiff peaks form. Fold the egg whites into the chocolate mixture until just mixed. Beat the cream until stiff and fold it into the chocolate mixture. Spoon into 6 individual serving bowls and refrigerate for at least 3 hours. Decorate each dish with segments of mandarin just before serving. Serves 6 The Golden Book of Chocolate
