  • 8 oz
    graham crackers, crushed
  • 5 oz
    milk chocolate
  • 5 oz
    semisweet chocolate
  • 1/2 c
    golden syrup or light corn syrup
  • 1 stick
    unsalted butter
  • 1/2 c
    raisins (optional)
  • 3/4 c
    dried apricots (or other dried fruit) optional
  • 1/2 c
    chopped pecans (optional)

How to Make Chocolate Fridge Cake


  1. Use plastic wrap to line an 8-in square pan. Leave extra plastic wrap hanging over the sides.
  2. Break the crackers into pieces with a rolling pin (if you have actual crackers and not crushed).
  3. Melt chocolate, butter, and syrup in a heatproof bowl set over a pan of simmering water on the stove. Stir until melted.
  4. Remove the bowl from the heat and stir in the broken crackers, apricots, raisins and pecans.
  5. Allow to cool then put the chocolate mixture in the refrigerator for 1 to 2 hours to set.
  6. Turn out the cake and peel off the plastic wrap. Cut the cake into 12 squares and enjoy!
