Ingredients

  • 8 ounces graham crackers, crushed
  • 5 ounces milk chocolate
  • 5 ounces semisweet chocolate
  • 1/2 cup golden syrup or light corn syrup
  • 1 stick unsalted butter
  • 1/2 cup raisins (optional)
  • 3/4 cup dried apricots (or other dried fruit) optional
  • 1/2 cup chopped pecans (optional)

How To Make chocolate fridge cake

  • Step 1
    Use plastic wrap to line an 8-in square pan. Leave extra plastic wrap hanging over the sides.
  • Step 2
    Break the crackers into pieces with a rolling pin (if you have actual crackers and not crushed).
  • Step 3
    Melt chocolate, butter, and syrup in a heatproof bowl set over a pan of simmering water on the stove. Stir until melted.
  • Step 4
    Remove the bowl from the heat and stir in the broken crackers, apricots, raisins and pecans.
  • Step 5
    Allow to cool then put the chocolate mixture in the refrigerator for 1 to 2 hours to set.
  • Step 6
    Turn out the cake and peel off the plastic wrap. Cut the cake into 12 squares and enjoy!
