chocolate eclair dessert
Years ago a previous boss' wife made this dessert for the office. This was such a fantastic dessert that we all asked her for the recipe. Over the years I have made this for tons of family and friends gathering and always get asked for the recipe. So here it is and I hope you all enjoy this as much as my family and friends.

Ingredients
- FILLING
- 2 packages whole graham crackers
- 2 packages 3.4 oz instant french vanilla pudding mix
- 3 cups milk
- 1 package 8 oz cool whip
- FROSTING
- 2 tablespoons butter, softened
- 2 ounces baking chocolate, semi-sweet
- 2 tablespoons corn syrup, light
- 3 tablespoons milk
- 1 teaspoon vanilla extract
- 1 1/2 cups powdered sugar
How To Make chocolate eclair dessert

Step 1Line the bottom of a 9x13 baking dish with whole graham crackers. Combine pudding mix and milk in a large bowl. Beat until stiff. Fold cool whip into pudding mixture. Pour ½ pudding mixture over graham cracker layer in pan. Top with another layer of graham crackers. Pour remaining pudding mixture over graham crackers. Top with another layer of crackers.

Step 2In separate bowl melt chocolate squares until able to mix (careful not to overcook). Mix in margarine, corn syrup, milk, vanilla and powdered sugar until spreading consistency. Spread over top layer of graham crackers. Chill at least 12 hour.
