I've made this both with graham cracker and vanilla wafers and they both taste good.

Ingredients

  • 2
    small boxes of vanilla pudding
  • 3 c
    milk
  • ·
    small container of coolwhip
  • 1
    whole box of graham crackers
  • ICING

  • 1 1/2 c
    powdered sugar
  • 1 tsp
    vanilla extract
  • 3 Tbsp
    butter or margarine
  • 3 Tbsp
    milk
  • 2 tsp
    light corn syrup
  • 2 Tbsp
    cocoa

How to Make Chocolate Eclair Cake

Step-by-Step

  1. Line buttered 9x13inch dish with graham crackers
  2. Prepare the pudding using the 3 cups of milk,when thick, fold in the whipped topping.
  3. pour some of the pudding on top of the graham crackers, then another layer of crackers, then pudding, and so on ending with graham crackers on top
  4. Mix ingredients together for the icing, Spread it over the top of the crackers.
    Refrigerate.
    This cake is better if made a day or so in advance.
