I've made this both with graham cracker and vanilla wafers and they both taste good.

Ingredients

  • 2 - small boxes of vanilla pudding
  • 3 cups milk
  • - small container of coolwhip
  • 1 - whole box of graham crackers
  • ICING
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 3 tablespoons butter or margarine
  • 3 tablespoons milk
  • 2 teaspoons light corn syrup
  • 2 tablespoons cocoa

How To Make chocolate eclair cake

  • Step 1
    Line buttered 9x13inch dish with graham crackers
  • Step 2
    Prepare the pudding using the 3 cups of milk,when thick, fold in the whipped topping.
  • Step 3
    pour some of the pudding on top of the graham crackers, then another layer of crackers, then pudding, and so on ending with graham crackers on top
  • Step 4
    Mix ingredients together for the icing, Spread it over the top of the crackers. Refrigerate. This cake is better if made a day or so in advance.
