chocolate crepes with hazelnut & raspberries

I was looking for a dessert one day and came up with this combo. can't go wrong with chocolate, raspberries and hazelnuts. Now asked for when friends come to visit :)

Ingredients

  • 1 1/2 cups buttermilk
  • 3 - eggs
  • 3 tablespoons butter, melted
  • 1 cup all purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons cocoa, unsweetened
  • 1 jar hazelnut spread
  • 1 jar seedless raspberry jam, melted
  • - chocolate topping , chopped hazelnuts for garnish
  • 1 pint fresh raspberries

How To Make chocolate crepes with hazelnut & raspberries

  • Step 1
    combine buttermilk, eggs and butter in large bowl, in another bowl combine the flour, sugar and cocoa; add to buttermilk mixture. Mix well. Cover and refrigerate for at least 1 hour.
  • Step 2
    Heat an 8 in skillet lightly greased on medium heat. pour 2 tablespoons batter into center of skillet, Lift and tilt pan to coat bottom evenly. Cook until top appears dry. flip and cook another 15-20 seconds. remove to cool. when cool, stack crepes with waxed paper in between.
  • Step 3
    When ready to serve; fill each crepe with 1 Tbsp.hazelnut spread. fold crepe in half and then in half again. Drizzle chocolate sauce over plate, place 2 crepes on plate, spread the raspberry jam over top of crepes,top with fresh raspberries and chocolate sauce, lightly dust with powdered sugar.
