chocolate covered craisin sourdough muffins

This recipe was inspired by my now 50 day old Amish Friendship Bread starter that I got from friendshipbread.com

Ingredients

  • 1 cup active sourdough starter
  • 3 - eggs
  • 1 cup oil
  • 1/2 cup milk
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2` teaspoon baking soda
  • 2 cups flour
  • 1 box chocolate pudding
  • 1 package craisins, or other dried fruit
  • 1/2 package semi-sweet chocolate chips
  • 1 - recipe, struessel topping
  • STRUESSEL TOPPING
  • 1/2 cup brown sugar, firmly packed
  • 1/2 cup flour
  • 1/4` cup butter
  • 1 teaspoon cinnamon

How To Make chocolate covered craisin sourdough muffins

  • Step 1
    Preheat oven to 325 and prepare muffin papers in muffin pans
  • Step 2
    Mix all ingredients together for muffins. Fill muffin papers half full.
  • Step 3
    Mix struessel topping together until it forms loose crumbs, if it clumps, add small amounts of flour until the crumb forms. Top muffins with struessel.
  • Step 4
    Bake muffins in the oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  • Step 5
    Allow muffins to cool in pans 10 minutes and remove to wire rack.
  • Step 6
    Variations can include different fresh or dried fruits, other types of chips and flavors of pudding. Vanilla pudding, white chocolate chips and dried cherries would be YUMMY!
