Pumpkin muffins is what became of the leftover pumpkin from yesterday's cake I posted. I'll freeze these and bring them out for the holidays. Enjoy!

Ingredients
- 2 1/2 cups flour
- 1 tablespoon baking powder
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon salt
- 1 cup pumpkin puree
- 1 cup packed, dark or light brown sugar
- 1/2 cup milk
- 1/4 cup sour cream
- 6 tablespoons melted butter
- 2 - eggs
- 1 cup chocolate chips
How To Make ~ chocolate chip pumpkin muffins ~

Step 1Preheat oven to 400 degree F. Line muffin tin with paper cups or spray with bakers joy. In a bowl, combine flour, pie spice, baking powder and salt. In another bole, beat pumpkin, eggs milk, butter, sour cream, until well blended. Stir into the flour the pumpkin mixture, and chocolate chips.Stir just until moistened. Fill each muffin cup 2/3 of the way full. Bake 15 - 17 minutes or until pick comes out clean. Cool for 10 minutes in pans then remove and finish cooling.
