chocolate chip oatmeal muffins

I eat homemade muffins every morning, so I have experimented with many recipes. These are simply the best!!! They are so moist and come out great every time.

Ingredients

  • 1-1/2 cup boiling water
  • 1 cup quick cooking oats
  • 1/2 cup butter, softened
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 - eggs
  • 1-1/2 cup all purpose flour
  • 1 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1 tablespoon cocoa
  • 1/2 cup semi-sweet chocolate chips

How To Make chocolate chip oatmeal muffins

  • Step 1
    Preheat oven to 350 degrees. If not using muffin papers, grease and flour muffin tin.
  • Step 2
    Mix boiling water, oatmeal and butter....let stand 10 minutes. Add white sugar, brown sugar and eggs....beat well.
  • Step 3
    In separate bowl, whisk together four, baking soda, salt and cocoa.
  • Step 4
    Mix wet ingredients with dry until well blended...do not overmix. Pour into prepared muffin tins...or, I like to use paper muffin cups in the tins. Evenly distribute the chocolate chips over the muffins. I always bake all my muffins for 20 minutes and add minutes as needed as to not overbake.
  • Step 5
    filling the muffin cups 3/4 full, I get 18 regular muffins or 9 when using the jumbo muffin tins. These freeze wonderfully.
