chocolate chip oatmeal muffins

I eat homemade muffins every morning, so I have experimented with many recipes. These are simply the best!!! They are so moist and come out great every time.

Approximately 18 muffins
Ingredients
- 1-1/2 cup boiling water
- 1 cup quick cooking oats
- 1/2 cup butter, softened
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 2 - eggs
- 1-1/2 cup all purpose flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 tablespoon cocoa
- 1/2 cup semi-sweet chocolate chips
How To Make chocolate chip oatmeal muffins

Step 1Preheat oven to 350 degrees. If not using muffin papers, grease and flour muffin tin.

Step 2Mix boiling water, oatmeal and butter....let stand 10 minutes. Add white sugar, brown sugar and eggs....beat well.

Step 3In separate bowl, whisk together four, baking soda, salt and cocoa.

Step 4Mix wet ingredients with dry until well blended...do not overmix. Pour into prepared muffin tins...or, I like to use paper muffin cups in the tins. Evenly distribute the chocolate chips over the muffins. I always bake all my muffins for 20 minutes and add minutes as needed as to not overbake.

Step 5filling the muffin cups 3/4 full, I get 18 regular muffins or 9 when using the jumbo muffin tins. These freeze wonderfully.
