chocolate cheery/cherry cake
This was served to us at a "Thank You Party" for my husband and his crew, after they built a boathouse in a family compound overlooking the ocean. We were sitting outside on the deck, enjoying the delicious meal, and this was the finale. I requested the recipe and it was mailed to me in 2008. Thanks to Dr. M.S. and her housekeeper!

Ingredients
- 8 ounces bittersweet choclate, melted
- 1/4 cup unsalted butter, melted
- 3/4 cup sugar
- 3/4 cup all-purpose flour
- 3/4 teaspoon baking powder
- 4 eggs
- 24 ounces sour cherries, jar/pitted/drained
- DIRECTIONS: PREHEAT OVEN TO 375 DEGREES.
- PREPARE A ROUND 9 INCH SPRING-FORM PAN; SPRAY WITH BAKING OIL, LINE WITH WAXED PAPER, SPRAY THE WAXED PAPER. (I USED A TUBE PAN, OILED AND LINED WITH WAXED PAPER.)
How To Make chocolate cheery/cherry cake

Step 1Melt chocolate (I used the microwave setting for this).

Step 2Melt the butter.

Step 3Beat the four eggs.

Step 4Measure dry ingredients and mix in a bowl, add the eggs, and the melted butter, and add the drained cherries.

Step 5Then stir well and add the chocolate until fully combined.

Step 6Spoon batter into the prepared pan and bake for 45 minutes. Test with a cake tester or a knife, if it comes out clean it is done.

Step 7Cool for about a half an hour, lift waxed paper around the edge, use a knife to help scrape around the cake if it's sticking, and then invert on a cake rack.

Step 8Cut into eight. generous slices or sixteen thin slices. It's very rich, This is delicious topped with whipped cream, or served with vanilla ice cream, or served with chocolate sauce.
