These are a big hit with the kid! They are the perfect grab and go and there is no frosting to make a mess!

Ingredients

  • 3/4 cup butter, room temperature
  • 3/4 cup milk chocolate chips
  • 3 - eggs
  • 3/4 cup sugar
  • 3/4 teaspoon vanilla extract
  • 3/4 cup all purpose flour
  • 1/2 cup chopped pecans (optional)

How To Make brownie chocolate chunk cupcakes

  • Step 1
    In a microwave safe bowl, melt butter and chocolate chips, stir until smooth. Cool Slightly.
  • Step 2
    In a small mixing bowl, beat the eggs and sugar. Stir in the vanilla and chocolate mixture. Gradually add flour to the chocolate mixture. Fold in the Pecans.
  • Step 3
    Fill paper lined muffin cups. Bake at 325 for 20-25 minutes or until the tops begin to crack.
  • Step 4
    Cool for 10 minutes before removing from the pan to a wire rack to cool completely.
