  • 1/4 cup light brown sugar
  • 3/4 cup powdered sugar
  • 1/4 cup butter--softened
  • 3/4 cup smooth peanut butter
  • - for topping:
  • 12 ounces white chocolate (not chips)

How To Make white chocolate peanut butter cups

  • Step 1
    FOR THE BASE: PLACE ALL INGREDIENTS FOR THE BASE IN A FOOD PROCESSOR OR BLENDER. BLEND MIX UNTIL MIXTURE TAKES ON A SANDY TEXTURE.
  • Step 2
    PLACE 12 CUPCAKE LINERS IN MUFFIN TIN, USING ICE CREAM SCOOP OR COOKIE SCOOP, PLACE 1 SCOOP OF BASE MIXTURE INTO EACH CUPCAKE LINER. PRESS MIXTURE DOWN INTO THE CUPS TO FORM AN EVEN LAYER AT BOTTOM OF EACH LINER.
  • Step 3
    FOR THE TOPPING: MELT CHOCOLATE OVER A DOUBLE BOILER OR IN MICROWAVE, USING YOUR SCOOP, TOP EACH PEANUT BUTTER FILLED CUPCAKE WITH 1 SCOOP OF CHOCOLATE. SMOOTH THE TOPS OF EACH PEANUT BUTTER CUP WITH BACK OF SPOON.
  • Step 4
    REFRIGERATE 1 HR. OR OVERNIGHT.
