Step 1FOR THE BASE: PLACE ALL INGREDIENTS FOR THE BASE IN A FOOD PROCESSOR OR BLENDER. BLEND MIX UNTIL MIXTURE TAKES ON A SANDY TEXTURE.

Step 2PLACE 12 CUPCAKE LINERS IN MUFFIN TIN, USING ICE CREAM SCOOP OR COOKIE SCOOP, PLACE 1 SCOOP OF BASE MIXTURE INTO EACH CUPCAKE LINER. PRESS MIXTURE DOWN INTO THE CUPS TO FORM AN EVEN LAYER AT BOTTOM OF EACH LINER.

Step 3FOR THE TOPPING: MELT CHOCOLATE OVER A DOUBLE BOILER OR IN MICROWAVE, USING YOUR SCOOP, TOP EACH PEANUT BUTTER FILLED CUPCAKE WITH 1 SCOOP OF CHOCOLATE. SMOOTH THE TOPS OF EACH PEANUT BUTTER CUP WITH BACK OF SPOON.
