very berry good truffles

Makes for a nice assortment to add to a Christmas basket for gift giving. They are simple and taste as good as they look. I haven't had any complaints only praises by friends and family.

Ingredients

  • 20 - vanilla wafers
  • 2 cups mixed dried fruit (blueberries,cranberries,cherries,& dates)
  • 1 teaspoon freshly grated orange zest
  • 1/2 cup light brown sugar, packed
  • 2 tablespoons orange juice, thawed concentrate
  • 1 tablespoon butter, room temperature
  • 1 tablespoon canola oil
  • 1 tablespoon honey
  • 3 tablespoons confectioners' sugar

How To Make very berry good truffles

  • Step 1
    In a food processor, pulse wafers until finely crumbled. Transfer to bowl. then pulse fruit and zest until finely chopped.
  • Step 2
    In a heavy 2 qt. saucepan add brown sugar, orange juice, butter, oil, and honey; bring to a simmer, stirring over medium-low heat. Stir in mixed fruit and wafer crumbs. Let cool 5 minutes.
  • Step 3
    With damp hands, roll fruit mixture into 1" balls, placing on wax paper as you work.
  • Step 4
    Place confectioners' sugar in a small bowl. Roll each ball into sugar to coat. Makes about 4 dozen
