this recipe can be cut in half , but my family really like it , so i make enough to last a day or to ! it probably should be kept in the fridge . I don't know how long it will keep , because it doesn't last long at my house .I found that if you put on plastic gloves , you can stir it with your hands , it's easier . than dump it into your pan , and throw gloves away . this recipe ( pan included ) makes 11 pounds !

in a large bowl , combine sugar , and cocoa , mix well , set aside .
  • Step 2
cut cheese and butter into small pieces , and melt until smooth and creamy . being careful that it doesn't scorch . I heat mine in the microwave , for 2 to 4 minutes .
  • Step 3
take large bowl , with sugar mixture , and make a " well " in the middle . pour hot cheese mixture into the well . add vanilla and nuts ,and stir until completely mixed . dump into pan . you can add a few nuts on top , if you like .
  • Step 4
there is no need to butter the pan , as the cheese and butter in the candy is enough , that it will not stick
