How to Make TOFFEE BITS (candy)
- line jelly roll pan with foil.
Grease foil with butter. Set aside
- Place all the ingredients in a large heavy pan, and bring to a HARD boil, stirring constantly with wooden spoon.
Cook until a candy thermometer reads HARD CRACK.
- Pour into Butter greased aluminum foil lined jelly roll pan (butter the foil)
allow to set, and chop into bits and pieces.
cooking time is approx; This will vary due to the pan you use and the heat.
This needs to boil to a rolling boil that cannot be stirred down stage.
TIP: (USE A CANDY THERMOMETER)
chop fine pecans and sprinkle over the butter lined foil, before pouring the hot toffee, for "butter pecan toffee".
