sweet chex crunch

I love just about every variety of Chex Mix, but this sweet version is my favorite. The recipe came to me from Ohio, via my sister, Jenny. I made it & took it to school where it was an instant hit. It's still making the rounds. =^..^=

Ingredients

  • 6 cups rice chex
  • 6 cups thin pretzels
  • 1 cup pecan halves, or whatever nut you like
  • 1 cup brown sugar, packed
  • 1/4 cup light karo syrup
  • 1 stick butter or margarine (1/2 cup)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda

How To Make sweet chex crunch

  • Step 1
    Set out two silicone baking sheets (or cover metal cookie sheets with parchment paper).
  • Step 2
    In a large microwave-safe bowl, mix together the Rice Chex, pretzels, and nuts. Set aside.
  • Step 3
    In a smaller microwave-safe bowl (I use my 4 cup glass measuring cup), put in the butter, brown sugar, and corn syrup. Microwave for 1 minute, then quickly stir. Microwave for 2 to 2 1/2 minutes more. Remove from microwave.
  • Step 4
    Stir in vanilla extract and baking soda, mixing well.
  • Step 5
    Pour over the Rice Chex mixture. Toss well & place bowl into the microwave. Cook for 4-5 minutes, stirring twice.
  • Step 6
    Quickly spread on prepared baking sheets & let cool. Break larger pieces. Store in an airtight container.
  • Step 7
    Place chex mix in decorative tins for a quick & delicious holiday gift.
  • Step 8
    NOTE: I've found that the longer microwave times work best for me or the chex mix is sticky. But please experiment with the cooking times since your microwave is different than mine. If the mixture is darkening, take it out. =^..^=
