I love to make fudge for my family but my son in law is allergic to chocolate so I make him this pumpkin fudge which he loves. We all do.

Ingredients

  • 3 cups white sugar
  • 1 cup brown sugar
  • 1/2 stick butter
  • 2/3 cup evaporated milk
  • 1/2 cup pumpkin
  • 2 teaspoons pumpkin pie spices
  • 2 cups white morsels
  • 1 - 7 ounce jar marshmallow cream
  • 1 cup chopped pecans
  • 1 1/2 teaspoons vanilla

How To Make spiced pumpkin fudge

  • Step 1
    Line an oblong cake pan with foil. Combine sugar, brown sugar, evaporated milk, pumpkin, butter and spice in medium, heavy duty saucepan.
  • Step 2
    Bring to a full rolling boil over medium heat, stirring constantly for 10 to 12 minutes or until candy thermometer reaches 234 degrees to 240 degrees, the soft ball stage.
  • Step 3
    Quickly stir in morsels, creme, nuts and vanilla. Stir vigorously for 1 minute or until morsels are melted.
  • Step 4
    Immediately pour into prepared pan. Stand on wire rack for two hours or until completely cool.
