Salted Nut Roll Bars

Makes 36 bars


  • CRUST:

  • 1 1/2 c
  • 2/3 c
    firmly packed brown sugar
  • 1/2 tsp
    baking powder
  • 1/2 tsp
  • 1/4 tsp
    baking soda
  • 1/2 c
    softened butter
  • 1 tsp
    pure vanilla extract
  • 2
    egg yolks
  • 3 c
    miniature marshmallows

  • 2/3 c
    light corn syrup
  • 1/4 c
  • 2 tsp
    pure vanilla extract
  • 12 oz
    peanut butter chips
  • 2 c
    salted peanuts

How to Make Salted Nut Roll Bars


  1. Heat oven to 350 degrees. In large bowl, combine all crust ingredients, except marshmallows, until crumb mixture forms. Press into ungreased 9" x 13" baking pan. Bake 12 to 15 minutes, or until light golden brown. Immediately sprinkle with marshmallows. Return to oven 1 to 2 minutes until marshmallows puff. Cool.
  2. In a large saucepan, heat corn syrup, butter, vanilla extract, and peanut butter chips just until chips are melted and mixture is smooth, stirring constantly. Remove from heat. Stir in salted peanuts. Immediately spoon over marshmallows. Chill.
