salted nut roll bars

This is another much-requested recipe, especially at our church potlucks. Enjoy!

Ingredients

  • CRUST:
  • 1 1/2 cups flour
  • 2/3 cup firmly packed brown sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1/2 cup softened butter
  • 1 teaspoon pure vanilla extract
  • 2 - egg yolks
  • 3 cups miniature marshmallows
  • TOPPING:
  • 2/3 cup light corn syrup
  • 1/4 cup butter
  • 2 teaspoons pure vanilla extract
  • 12 ounces peanut butter chips
  • 2 cups salted peanuts

How To Make salted nut roll bars

  • Step 1
    Heat oven to 350 degrees. In large bowl, combine all crust ingredients, except marshmallows, until crumb mixture forms. Press into ungreased 9" x 13" baking pan. Bake 12 to 15 minutes, or until light golden brown. Immediately sprinkle with marshmallows. Return to oven 1 to 2 minutes until marshmallows puff. Cool.
  • Step 2
    In a large saucepan, heat corn syrup, butter, vanilla extract, and peanut butter chips just until chips are melted and mixture is smooth, stirring constantly. Remove from heat. Stir in salted peanuts. Immediately spoon over marshmallows. Chill.
