1 c
brown sugar, firmly packed
1/2 c
corn syrup
1/2 c
half and half
unsweetened chocolate squares
2 Tbsp
butter, cut in small pieces
1 tsp
vanilla extract

How to Make Rich Chocolate Caramels


  • 1Place sugars, corn syrup, half and half and chocolate in large heavy saucepan.
  • 2Bring to boil, stirring to melt chocolate and dissolve sugar.
  • 3Reduce heat to moderate and continue cooking, stirring occasionally, until syrup reaches 248 on candy thermometer (firm-ball stage).
  • 4Remove from heat.
  • 5Quickly stir in butter and vanilla just until blended and butter melts.
  • 6Pour into well-greased 8x8x2" pan.
  • 7Cool; cut in small squares.
  • 8If desired, top each square with pecan half or almond slivers.
  • 9Wrap individually in plastic wrap or foil.
  • 10Store in cool, dry place.
  • 11Makes about 1-1/2 pounds.
