Ingredients
- 1 cup sugar
- 1 cup brown sugar, firmly packed
- 1/2 cup corn syrup
- 1/2 cup half and half
- 2 - unsweetened chocolate squares
- 2 tablespoons butter, cut in small pieces
- 1 teaspoon vanilla extract
How To Make rich chocolate caramels

Step 1Place sugars, corn syrup, half and half and chocolate in large heavy saucepan.

Step 2Bring to boil, stirring to melt chocolate and dissolve sugar.

Step 3Reduce heat to moderate and continue cooking, stirring occasionally, until syrup reaches 248 on candy thermometer (firm-ball stage).

Step 4Remove from heat.

Step 5Quickly stir in butter and vanilla just until blended and butter melts.

Step 6Pour into well-greased 8x8x2\" pan.

Step 7Cool; cut in small squares.

Step 8If desired, top each square with pecan half or almond slivers.

Step 9Wrap individually in plastic wrap or foil.

Step 10Store in cool, dry place.

Step 11Makes about 1-1/2 pounds.
