How to Make Rach's Chewy Caramels
- Line a 8" pan with foil allowing plenty to hang over edges...coat with cooking spray..set aside
- Melt butter in sauce-pan over low heat...stir in brown sugar, condensed milk, and corn syrup...stir well. Bring to a boil stir often until it reaches 235 degrees on candy thermometer...remove from hean and stir for 1 minute, until smooth...quickly pour into prepared pan. Let satnd 3 hours. Lift out of pan cut into 60 pieces with a buttered sharp knife. Wrap into individual pieces of waxed paper or plastic wrap.
