1Mix peanut butter, vanilla, and powder sugar together. when just stiff enough, (a little more powder sugar may be needed.) roll into balls and place on cookie sheets lined with parchment paper. Place in refrigerator to cool about 20 min.
2Melt chocolate (either bakers chocolate or chocolate chips) over medium heat in double boiler.
3Keeping chocolate warm, dip each peanut butter ball into the chocolate and place back on cookie sheet.
When completed, leave for chocolate to set up. Approx. an hour. Place in cookie tins to keep fresh, serve.
For those who have allergies to chocolate, roll each ball in a dusting of powder sugar.
