1cook one medium to large peeled potato, drain cool. Put in mixer and start mixing cooked potato. Start adding powdered sugar, at first it will turn more liquid looking just keep adding powder sugar until it comes together into a ball. Roll out with powdered sugar on counter. Spread peanut butter over all of dough. Roll from small end of dough until completely rolled. let sit and rest for 10 minutes. Cut into round pieces not too thick about like a sugar cookie. Taste Great. Cover to keep fresh. No refrigerator needed.
