This recipe comes from my mom back in the 50's. There were 10 kids so not a lot of money for extras since my father was a Coal Miner. You just need a cooked potato, powdered sugar and peanut butter

Ingredients
- 1 large potato cooked till tender
- 2 packages 16 oz powdered sugar or more according to how big the potato is
- 2 cups creamy peanutbutter
How To Make potato candy

Step 1cook one medium to large peeled potato, drain cool. Put in mixer and start mixing cooked potato. Start adding powdered sugar, at first it will turn more liquid looking just keep adding powder sugar until it comes together into a ball. Roll out with powdered sugar on counter. Spread peanut butter over all of dough. Roll from small end of dough until completely rolled. let sit and rest for 10 minutes. Cut into round pieces not too thick about like a sugar cookie. Taste Great. Cover to keep fresh. No refrigerator needed. FROM A COAL MINER's daughter Jazzelise
