My mother-in-law makes this candy every Christmas. She came from a large family and this was an inexpensive treat for them as children. It is very rich so one piece goes a long way.

The only hard part about this recipe is deciding whether to use creamy or crunchy peanut butter! Otherwise it's a dream to make and even dreamier to eat.

Ingredients
- 1 - medium potato
- 1 tablespoon butter
- 1 teaspoon vanilla extract
- (1) 1 pound box of powdered sugar
- - peanut butter to taste (smooth or crunchy)
How To Make potato candy

Step 1In small saucepan cover whole, unpeeled potato with water and boil until tender.

Step 2Drain, peel and place in large mixing bowl. Beat with electric mixer; add butter and vanilla.

Step 3Slowly add the powdered sugar, mixing until you have a stiff dough.

Step 4Roll out on a powdered-sugared surface. Spread with a layer of peanut butter.

Step 5Roll up as for a jelly roll. Chill until firm and then slice into 1/2-inch confections.
