Ingredients
- CRUST
- 14 tablespoons butter melted
- 1/2 cup packed light brown sugar
- 1 teaspoon salt
- 2 cups flour
- CARAMEL TOPPING
- 2 cups chopped pecans
- 1 cup packed light brown sugar
- 3/4 cup heavy cream
- 1/2 cup butter
- 1/2 cup light corn syrup
- 1/2 teaspoon salt
- GANACHE
- 12 tablespoons heavy cream
- 3 1/2 ounces good quality dark chocolate
How To Make pecan caramel turtle bars

Step 1For the crust Line a 9x13 pan with foil and let it hang over the sides for easy removal. and spray with cooking spray. Melt the butter and add the brown sugar, salt and flour. Press into the bottom of the prepared pan. Freeze for 10 minutes. Preheat oven 325 degrees Bake the crust for 25 minutes until browned. Remove from the oven.

Step 2Sprinkle the pecans over the crust. Set aside.

Step 3For the caramel topping In a heavy saucepan bring the brown sugar, cream, butter, corn syrup, and salt to a boil. Cook until candy thermometer reaches 240 degrees Pour over top the crust and smooth it with a spatula. Let cool at least 2 hours until hardened.

Step 4For the ganache In a small saucepan add the heavy cream and bring to a boil. Remove from heat. Finely chop the chocolate and add the the heavy cream. Let sit for 3 minutes then stir until smooth. Pour over top the caramel layer.

Step 5Place in the fridge and let harden then cut into squares.
