peanut clusters

When I was a teenager, my stepmom spent days making a variety of candy and cookies for Christmas every year. These were always my favorite among all the goodies she made, so she gave me her recipe. It's so easy to make, and it's a standard offering at Christmastime in my home now. And they always go fast. Other varieties of nuts work well, too. So for variation you can use almonds, pecans, hazelnuts/filberts or macadamia nuts.

prep time 5 Min
cook time 10 Min
method Stove Top
yield makes about 5 dozen candies

Ingredients

  • 12 ounces chocolate chips or chocolate almond bark (the bark melts a little more smoothly than the chips)
  • 12 ounces white almond bark
  • 2 cups - peanuts (about a 16-oz jar - salted or unsalted)

How To Make peanut clusters

  • Step 1
Melt the chocolate chips and almond bark together, stirring frequently to blend and to keep from scorching.
  • Step 2
Immediately after the bark is melted, add peanuts and stir well.
  • Step 3
Drop teaspoonfuls onto a long sheet of waxed paper and let the clusters harden (about 30 minutes minimum).
