With a texture similar to a cheesecake, it tastes like the filling of peanut butter cookies. Each ball is coated in a dark chocolate shell. Sprinkling with crushed peanuts adds a hint of saltiness. Ingredients
- 2 cups whipping cream
- 2 pounds white chocolate, melted
- 2 cups creamy peanut butter
- 1 pound dark bittersweet chocolate
- - crushed peanuts, for decoration

To scald the cream, we put the cream over a double boiler and heated it to 180 degrees F. If you don't have one, use a heavy saucepan on medium-low heat and heat until it comes to temperature.

Step 1Scald whipping cream in a small saucepan.

Step 2Remove from heat and chill.

Step 3Combine melted white chocolate and peanut butter in a mixing bowl.

Step 4Blend.

Step 5Add chilled whipping cream.

Step 6Continue blending at high speed until a smooth consistency is achieved.

Step 7Pour the mixture into a suitable container and place it in the refrigerator for 24 hours to allow the mixture to set.

Step 8Using a melon baller or a number 70 scoop, form the mixture into balls. Place balls on a sheet pan and into the refrigerator to firm up.

Step 9Melt the dark chocolate over a double boiler.

Step 10Gently dip each ball in the melted chocolate so it's fully coated.

Step 11Place on a parchment paper-lined baking sheet.

Step 12Decorate with crushed peanuts. Keep truffles in the refrigerator until required.
