These peanut butter truffles are decadent and a wonderful combination of sweet and salty. The creamy white chocolate and peanut butter filling is silky smooth. With a texture similar to a cheesecake, it tastes like the filling of peanut butter cookies. Each ball is coated in a dark chocolate shell. Sprinkling with crushed peanuts adds a hint of saltiness. A delicious candy for the holidays.

Ingredients

  • 2 cups whipping cream
  • 2 pounds white chocolate, melted
  • 2 cups creamy peanut butter
  • 1 pound dark bittersweet chocolate
  • - crushed peanuts, for decoration

To scald the cream, we put the cream over a double boiler and heated it to 180 degrees F. If you don't have one, use a heavy saucepan on medium-low heat and heat until it comes to temperature.
  • Scald the whipping cream.
    Step 1
    Scald whipping cream in a small saucepan.
  • Remove from the heat and chill.
    Step 2
    Remove from heat and chill.
  • Add melted white chocolate and peanut butter to a mixing bowl.
    Step 3
    Combine melted white chocolate and peanut butter in a mixing bowl.
  • Blend.
    Step 4
    Blend.
  • Add chilled whipped cream.
    Step 5
    Add chilled whipping cream.
  • Continue blending until smooth.
    Step 6
    Continue blending at high speed until a smooth consistency is achieved.
  • Pour into a container and chill.
    Step 7
    Pour the mixture into a suitable container and place it in the refrigerator for 24 hours to allow the mixture to set.
  • Scoop 70 balls.
    Step 8
    Using a melon baller or a number 70 scoop, form the mixture into balls. Place balls on a sheet pan and into the refrigerator to firm up.
  • Melt the chocolate.
    Step 9
    Melt the dark chocolate over a double boiler.
  • Dip balls into the chocolate.
    Step 10
    Gently dip each ball in the melted chocolate so it's fully coated.
  • Place on a baking sheet.
    Step 11
    Place on a parchment paper-lined baking sheet.
  • Sprinkle wth crushed nuts.
    Step 12
    Decorate with crushed peanuts. Keep truffles in the refrigerator until required.
