my mama always made this as a treat for us at Christmas but you could have it all year long - everyone loves it - I'm not sure of where she got this recipe.

  • 1 large
    potato raw and uncooked
  • 1 c
    peanut butter
  • 5 c
    powdered sugar
  • 1/4 c
    semi-sweet mini chocloate chips (optional)
  • 1 pinch

How to Make peanut butter and potato candy


  1. wash and boil your whole potato in the jacket - a pinch of salt in the water you use to boil your potato in
    when potato is tender and done - take it and cook slightly.
    peel the jacket off the potato
    put your potato in a bowl
    mash up like mashed potatoes
    add enough powdered sugar to make the consitency of pie dough
    make sure both ingredients are well blended
    dust your area with powdered sugar to roll out your dough
    dust a little powdered sugar on your dough
    roll out to the consitency of pie dough
    spread out peanut butter on the potato dough
    optional to add mini semi sweet chocolate chips
    roll your dough like a jelly roll
    wrap in saran wrap
    take out of your freezer about 20 t0 30 minutes before serving
    slice in pieces about 1/3 inch wide
    it is very rich so you don't want your slices too thick
    no one will ever guess that you have a potato in the dough
