Ingredients

  • 2 cups granulated sugar
  • 1 cup white corn syrup
  • 1/4 cup water
  • 3 tablespoons butter, room temperature
  • 1 tablespoon vanilla extract
  • 2 teaspoons baking soda
  • 1 1/2 cups salted peanuts

How To Make peanut brittle

  • Step 1
    Cook syrup, sugar, and water in a heavy pan over med. heat, stirring constantly until sugar is dissolved. Cook until mix reaches 285 degrees on a candy therm.
  • Step 2
    Remove at once and stir in nuts and butter. Cook and stir again to 295 degrees and remove from heat and add vanilla and soda. Stir rapidly. Pour onto a well greased cookie sheet and cool. When cool crack into pieces.
