How to Make Original Pecan Pralines
- Combine sugar and water in a heavy 2-qt saucepan.
- Heat to boiling, using low heat and stirring CONSTANTLY. Stir in pecans.
- Cook until mixture reaches softball stage or 235 degrees. Be careful not to burn.
- Remove from heat; stir in butter. Immediately drop by tablespoon onto waxed paper.
- Let stand until firm.
Yield about 1 1/2 dozen.
