I have been making these for years and giving them to my family, neighbors and friends for Christmas or Easter gifts. I also have added peanut butter instead of coconut amd chilled for several hours and rolled into balls or shape into eggs and chilled while melting candy coating. (it's fun to use colored candy coating at Easter} The coconut taste just like Mounds Bars.

Ingredients

  • 4 cups confectioners' sugar
  • 4 cups flaked coconut
  • 3/4 cup cold mashed potatoes (without added milk or butter)
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 teaspoon salt
  • 1 pound dark candy coating

How To Make norma's potato candy

  • Step 1
    In a large bowl, combine the first five ingredients.
  • Step 2
    Line a 9 inch square pan with foil; butter the foil.
  • Step 3
    Spread coconut mixture into pan.
  • Step 4
    Cover and chill overnight.
  • Step 5
    Cut into 2 inch by 1 inch retangles. Cover and freeze.
  • Step 6
    In a microwave or double boiler, melt candy coating
  • Step 7
    Dip bars in coating; place on waxed paper to harden
  • Step 8
    Store in an airtight container.
