Ingredients
- 1/2 cup toasted chopped pecans
- 1 cup sugar
- 1/4 cup water
- 1 teaspoon salt
- 1/2 cup butter, unsalted (no substitutions)
- TOPPING
- 3/4 cup semi-sweet chocolate chips
- 1/4 cup very finely chopped toasted pecans
How To Make microwave pecan roca

Step 1Sprinkle 1/2 cup nuts in a 9" square on Sil-pat or buttered baking sheet, foil, or waxed paper

Step 2Butter the top edges of a 2-qt. microwave safe casserole - I use my batter bowl with handle.

Step 3Put in butter, salt, sugar and water. DO NOT STIR!

Step 4Put the dish in the microwave on high for 6 to 8 minutes. Check mixture at 7 minutes and continue cooking a minute at a time until the mixture just begins to turn tan. You need to watch it here and remember DON'T STIR!

Step 5Pour the mixture over the pecans. Immediately sprinkle the chocolate on top and let sit for 1 minute.

Step 6After 1 minute use a spatula to spread the chocolate. Sprinkle remaining nuts over the top - press down as much as you can. Put in refrigerator to cool completely. Break into small pieces.
