Microwave Pecan Roca
Ingredients

1/2 ctoasted chopped pecans

1 csugar

1/4 cwater

1 tspsalt

1/2 cbutter, unsalted (no substitutions)

TOPPING

3/4 csemi-sweet chocolate chips

1/4 cvery finely chopped toasted pecans
How to Make Microwave Pecan Roca
- Sprinkle 1/2 cup nuts in a 9" square on Sil-pat or buttered baking sheet, foil, or waxed paper
- Butter the top edges of a 2-qt. microwave safe casserole - I use my batter bowl with handle.
- Put in butter, salt, sugar and water. DO NOT STIR!
- Put the dish in the microwave on high for 6 to 8 minutes. Check mixture at 7 minutes and continue cooking a minute at a time until the mixture just begins to turn tan. You need to watch it here and remember DON'T STIR!
- Pour the mixture over the pecans. Immediately sprinkle the chocolate on top and let sit for 1 minute.
- After 1 minute use a spatula to spread the chocolate. Sprinkle remaining nuts over the top - press down as much as you can. Put in refrigerator to cool completely. Break into small pieces.
