kekin niyok (coconut candy - chamorro )
This simple coconut candy recipe is a quick treat that the children in my family seem to enjoy. It's the first one I posted because it makes me think of my dad. When doing yard work, he would sometimes grab a coconut off the tree and make us some. The problem was that he'd only make a little and we'd all be fighting over it. Make sure that you use real coconut for this recipe. It probably won't turn out so well with that prepackaged coconut from the stores.

Ingredients
- 2 large coconuts (not young coconut / munha). make sure the niyok has hardened and is thick. (kamyu / shredded).
- 1 cup granulated sugar

Step 1Melt the sugar in a pan over medium heat.

Step 2Throw in coconut and stir around. The mixture should be sticky, thick, and brown.

Step 3Roll into little balls (like meatballs) and serve!
