irish potatoes (candy)
These Irish Potatoes are a delicious treat for any time, but especially around St. Patrick's Day. When I grew up in Philadephia,PA., this candy was a regular part of our St. Paddy's Day celebration and can still be found in stores around the wearin' o' the green. They are a coconut fondant, made from mashed potatoes, rolled in cinnamon. The finished product resembles little potatoes. Enjoy! Take note: The recipe calls for mashed potatoes. These are fully seasoned. You can use left overs from your dinner, make them fresh, buy them already made or use instant.

- 6 tablespoons mashed potatoes
- 2 tablespoons butter, softened
- 1/2 teaspoon vanilla extract
- 1 1/2 pounds confectioners' sugar
- 1/4 teaspoon salt
- 7 ounces shredded coconut

Step 1Mix all ingredients together well (I use a stand mixer now, but used to mix them by hand). Shape into about 3/4-inch diameter balls, and roll in ground cinnamon, shaking off excess. Store in a sealed container, like a cookie tin or a Rubber Maid container.
