Irish Potatoes (candy)

Pat Mullen

These Irish Potatoes are a delicious treat for any time, but especially around St. Patrick's Day. When I grew up in Philadephia,PA., this candy was a regular part of our St. Paddy's Day celebration and can still be found in stores around the wearin' o' the green. They are a coconut fondant, made from mashed potatoes, rolled in cinnamon. The finished product resembles little potatoes. Enjoy!

Take note: The recipe calls for mashed potatoes. These are fully seasoned. You can use left overs from your dinner, make them fresh, buy them already made or use instant.
