How to Make Irish Potato Candy
- 1Cook potatoes with skins on. Let cool when done.
- 2Take skins off and mash the potato.
- 3Add powdered sugar and vanilla, enough sugar to make a ball of dough.
- 4Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.
- 5Once rolled out spread the peanut butter over all of it.
- 6Roll it up like a jelly roll and wrap in wax paper.
- 7Refrigerate 4 hours or over night before serving.
