Irish Potato Candy

2 1/2 cpowdered sugar

1 tsppure vanilla extract

How to Make Irish Potato Candy
- Cook potatoes with skins on. Let cool when done.
- Take skins off and mash the potato.
- Add powdered sugar and vanilla, enough sugar to make a ball of dough.
- Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.
- Once rolled out spread the peanut butter over all of it.
- Roll it up like a jelly roll and wrap in wax paper.
- Refrigerate 4 hours or over night before serving.
