Ingredients

  • 1 small potato
  • 2 1/2 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • - peanut butter, creamy

How To Make irish potato candy

  • Step 1
    Cook potatoes with skins on. Let cool when done.
  • Step 2
    Take skins off and mash the potato.
  • Step 3
    Add powdered sugar and vanilla, enough sugar to make a ball of dough.
  • Step 4
    Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.
  • Step 5
    Once rolled out spread the peanut butter over all of it.
  • Step 6
    Roll it up like a jelly roll and wrap in wax paper.
  • Step 7
    Refrigerate 4 hours or over night before serving.
