Ingredients
- 1 small potato
- 2 1/2 cups powdered sugar
- 1 teaspoon pure vanilla extract
- - peanut butter, creamy
How To Make irish potato candy

Step 1Cook potatoes with skins on. Let cool when done.

Step 2Take skins off and mash the potato.

Step 3Add powdered sugar and vanilla, enough sugar to make a ball of dough.

Step 4Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.

Step 5Once rolled out spread the peanut butter over all of it.

Step 6Roll it up like a jelly roll and wrap in wax paper.

Step 7Refrigerate 4 hours or over night before serving.
