1 small
potato
2 1/2 c
powdered sugar
1 tsp
pure vanilla extract
peanut butter, creamy

How to Make Irish Potato Candy

Step-by-Step

  • 1Cook potatoes with skins on. Let cool when done.
  • 2Take skins off and mash the potato.
  • 3Add powdered sugar and vanilla, enough sugar to make a ball of dough.
  • 4Use a 1/2 cup of powdered sugar to roll out the dough sprinkle a little on top.
  • 5Once rolled out spread the peanut butter over all of it.
  • 6Roll it up like a jelly roll and wrap in wax paper.
  • 7Refrigerate 4 hours or over night before serving.
