A good use for leftover mashed potatoes. I've seen other recipes that say to use unseasoned mashed potatoes, but I just use leftovers. Been making these for 40 years. Big hit with coconut lovers.

No-Cook or Other


  • 3/4 c
    mashed potatoes
  • 1 box
    powdered sugar, 16 oz
  • 4 c
  • 1 tsp
  • 1/8 tsp
  • 1 pkg
    chocolate chips, 6 oz
  • 1/2 oz

How to Make Irish Gems


  1. Blend together mashed potatoes and sugar. Add coconut, vanilla, and salt.
  2. Drop from a teaspoon onto wax paper or greased cookie sheet. Shape into peaks. Let stand uncovered 30 minutes.
  3. Melt, in a saucepan over very low heat, chocolate chips and paraffin.
  4. Using a teaspoon, pour chocolate mixture over peaks of candy. Cool.
  5. Makes approximately 4 dozen.
  6. Note: I usually add about 2 cups of chopped pecans.
  7. Note: If you shape the mixture around an almond and dip the ball in the chocolate you have a mini faux Almond Joy!
