egg whites, room temperature
8 Tbsp
1/4 c
finely chopped hazelnuts
1 Tbsp
finely chopped hazelnuts

How to Make Hazelnut Meringues


  • 1Preheat oven to 250.
  • 2Line 2 large cookie sheets with wax paper or parchment.
  • 3In small bowl of electric mixer, (hand mixer works fine) whisk whites until they peak softly.
  • 4Beat in sugar, 2 tablespoons at a time and continue until mixture is stiff and shiny.
  • 5Quickly fold in 1/4 cup chopped hazelnuts.
  • 6Drop by tablespoons onto prepared cookie sheets.
  • 7Sprinkle the remaining tablespoon of nuts.
  • 8Bake in preheated oven for 3 hours until dry.
