I make these a few times special during the year, and for special occassions. They really are the easiest thing to make and kids can make them too.... whats best is they even have the same snap a peppermint patty has as well!

Ingredients
- 1 - eggwhite
- 4 cups powdered sugar
- 1/3 cup lite corn syrup
- 1/2 teaspoon peppermint oil/or extract
- - cornstarch for dusting purposes
- 1 package 16 oz bag of semi-sweet chocolate chips

Step 1in medium bowl(not plastic) beat whites until stiff peaks form. slowly add powdered sugar with electric mixer on medium speed. towards end of mixing, I use a gloved hand to mix. Add corn syrup and peppermint and need mixture until smooth with hand until dough consistancy.

Step 2Roll out dough to 1/4 inch thickness and use 2-21/2 inch circle cut out for guide and place dusted cut-out on a cookie sheet in fridge. let firm for 45 minutes.

Step 3Melt chocolate chips in microwave being careful not to scortch chocolate. OR do on top of a double boiler. Drop each patty one at a time in the melted chips and chill until firm. About half hour or so. ~~~Enjoy ~~~ and please share!
