easy delicious salted caramels

Who would've ever thought that caramels could be so easy to make? This recipe has you make them in the microwave. Start to finish they take 17 minutes! (Not including cooling, cutting and wrapping.) Next time I think I'll do them for 11 minutes, though. Mine are fine, just a wee bit hard at first. But after they are in your mouth for less than 30 seconds, they are completely chewable and so, so very good!!! Just go by how powerful your microwave is. Some of the best caramels I've ever had or made! Sprinkle with coarse salt for extra goodness! Great Christmas gift, too!! Photo by me.

Ingredients

  • 1 stick real butter
  • 1 cup white sugar
  • 1 cup light or dark brown sugar
  • 1 cup light kayro syrup
  • 1 cup sweetened condensed milk, save extra dab for coffee sweetener
  • 1 tablespoon vanilla
  • 2 teaspoons kosher or any large grain coarse salt, optional

How To Make easy delicious salted caramels

  • Step 1
    Line a 7x11 baking dish with foil and heavily spray with butter-flavored cooking spray. Set aside. In VERY large mixing bowl, melt butter in microwave. My bowl is a heavy-duty Pyrex 4.0 Liter bowl. DO NOT use a smaller bowl! If you don't have a big enough bowl, just make a half of a recipe in a large bowl. Reason being, this bubbles up and you DO NOT want it to boil over!! After butter is melted, stir in rest of ingredients well. Microwave on high for 11-12 minutes stirring after every 2 minutes. Stir when done, stir in vanilla and pour, carefully, into prepared baking dish. Let sit 5 minutes and sprinkle with salt if desired. *Salt brings out the flavor and makes it even more delicious. Put into fridge and let cool for 20-30 minutes. Cut with long, sharp knife oiled constantly with butter for easier cutting. Wrap pieces in waxed paper or parchment paper. Store at room temp in airtight container.

    You can also dip these in chocolate if desired. Either way makes great gifts!!
  • Step 3
    *****If making a half of a batch, cut the microwave time in HALF. Only nuke for 6 minutes for a high wattage microwave. 7 if you have a lower wattage microwave.
