Old recipe from my Mennonite Cookbook for candy. This one hails from Oregon.
My Mom made this for us when we were small and I can still remember the taste of it in my head. This seems to be the same ingredients she used back in the 50's.

Ingredients

  • 3 c
    sugar
  • 1 c
    white syrup - karo syrup
  • 1/2 c
    hot water
  • 3
    egg whites, stiffly beaten
  • 1 c
    chopped walnuts
  • 1 tsp
    good vanilla

How to Make Divinity Candy

Step-by-Step

  1. Cook sugar, syrup and water together until syrup forms a soft ball when dropped in cold water (265 degrees on a candy thermometer) Do not stir after sugar is dissolved.
  2. Pour syrup slowly over the stiffly beaten egg whites.
    Beat until creamy, add chopped nuts and vanilla.
    Pout into a buttered pan and cut into squares or drop from spoon onto waxed paper.
