How to Make Cream Caramels
- Sprinkle the chopped nuts evenly on the bottom of a buttered 8 inch square pan.
- Mix sugar, corn syrup, butter and cream in a saucepan and bring to a boil over low heat, stirring constantly. Gradually stir in the cream. Continue to stir as mixture thickens, and cook to 250 degrees, or until a little dropped in cold water forms a hard ball. Remove from heat and pour over the nuts in the pan.
- Refrigerate. When cold, cut into squares.
