For anyone with a sweet tooth, this is a wonderful and tasty treat to enjoy. You could buy frozen grated coconut, but if you're grating it yourself about a half of one coconut is needed.

Ingredients

  • 2 cups grated coconut
  • 1 1/2 cups brown sugar
  • 2 cups water
  • 1/2 cup carnation milk
  • 2 teaspoons vanilla extract
  • 1 teaspoon cinnamon powder
  • 1/4 teaspoon baking powder

How To Make coconut candy (tablet kokoye)

  • Step 1
    Bring water to a boil and add coconut, cinnamon and brown sugar.
  • Step 2
    Cook/boil coconut mixture for 5- 10 minutes on medium low heat.
  • Step 3
    Add vanilla extract and 1/2 c. of carnation milk to coconut mixture.
  • Step 4
    Remove from heat and add remaining ingredients.
  • Step 5
    Stir constantly and cook for an additional 25 minutes on low heat until liquid is a little low and mixture hardens a bit.
  • Step 6
    Place spoonfuls on a plate, foil paper or wax sheet and allow to cool and harden.
