8 ozsemi-sweet baking chocolate

8 ozheavy cream
-
1 ozbutter, cold

2 Tbspbrandy extract
-
1egg yolk (beaten)
-
FOR THE COATING
-
·cocoa powder
-
·almonds, chopped
-
·confectioners' sugar
How to Make Chocolate truffles
- In a sauce pan bring the heavy cream to boil, remove from heat , beat the egg yolk in. Add The chocolate, then stir until melted. Stir in the butter and the brandy.
- Pour into a bowl and let it cool. Cover with plastic wrap and put it in the freezer for 6 hours.
- With a melon baller make little balls an then rolls them on your favorites coatings. Use candy liners for a nice presentation.
