Chocolate Raspberry Truffles

- whipping cream
- 2 c
- (12 ounces) semisweet chocolate morsels
- 3 Tbsp
- seedless raspberry preserves, at room temperature
- 1/2 tsp
- almond extract
- 3/4 c
- finely ground almonds
How to Make Chocolate Raspberry Truffles
- 1In a medium saucepan, bring cream to a boil over medium-high heat. Remove from heat; whisk in chocolate morsels, preserves, and almond extract until combined. Refrigerate for at least 2 hours.
- 2Shape chocolate mixture into 1/2-inch balls. Roll each ball in ground almonds; Refrigerate truffles until ready to serve.
- 3Makes 36 truffles.
