Ingredients

  • 60 - maraschino cherries
  • 3 tablespoons butter
  • 3 tablespoons light corn syrup
  • 2 cups powdered sugar
  • 24 ounces semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening

How To Make chocolate covered cherries

  • Step 1
    Drain cherries on paper towel for several hours or overnight.
  • Step 2
    In a small mixing bowl combine the softened butter and light corn syrup.
  • Step 3
    Stir in powdered sugar; knead until mixture is smooth.
  • Step 4
    Shape about 1/2 teaspoon of sugar mixture around each cherry.
  • Step 5
    Place the coated cherries on a parchment lined baking sheet: chill.
  • Step 6
    Melt the dipping chocolate and add shortening.
  • Step 7
    Holding the cherries by the stems, dip the cherries into the melted chocolate.
  • Step 8
    Be sure to completely seal the cherries in chocolate; otherwise, cherry juice may leak out.
  • Step 9
    Chill until chocolate is firm.
  • Step 10
    Place cherries in an airtight container and let them ripen in the fridge for 1-2 weeks before serving.

    Ripening is necessary to allow powdered sugar mixture around the cherries to do soften and liquefy.
  • Step 12
    Store in refrigerator.
