chocolate cheese fudge
Over the years I tried to make traditional fudge. I guess I just don't get the 'soft-ball' concept. I would usually end up using my fudge for frosting a cake. This fudge never fails. No guessing and perfect every time...even for a candy-making challenged person such as myself. And you don't have to tell anyone it has cheese in it!!!

Ingredients
- 1/2 pound velvetta cheese, cubed
- 1 cup real butter (unsalted)
- 1 teaspoon vanilla
- 1 cup chopped nuts, pecans or walnuts (optional)
- 2 pounds powdered sugar
- 1/2 cup cocoa powder
How To Make chocolate cheese fudge
-
Step 1Lightly spray the bottom of a 13 x 9 inch pan or dish with non-stick spray.
-
Step 2In a large bowl, sift together the sugar and cocoa powder.
-
Step 3Melt Velvetta and butter in a saucepan over medium heat, stirring constantly until smooth.
-
Step 4Remove from heat and add vanilla and nuts.
-
Step 5Pour cheese mixture into the sugar and cocoa mixture. I stir with a spoon, just until moistened then I use latex gloves and mix it with my hands until all the sugar is mixed in.
-
Step 6Pour into pan and pat in with your hands. Because of the amount of butter in this recipe, pat the top of the candy with a paper towel to remove excess oil. Place candy in refrigerator until candy is firm. Cut into squares.
