Ingredients

  • 2 cups sugar
  • 1 cup brown sugar
  • 1/2 cup butter
  • 2 cups nuts, finely chopped
  • 1 cup corn syrup
  • 3 - unsweetened chocolate squares
  • 1 cup cream
  • 1/4 teaspoon salt
  • 1 tablespoon vanilla extract

How To Make chocolate caramels

  • Step 1
    Cut chocolate in small pieces.
  • Step 2
    Add sugar, butter, salt, syrup and cream.
  • Step 3
    Cover and boil 5 minutes.
  • Step 4
    Uncover.
  • Step 5
    Boil slowly, stirring constantly, to firm ball stage 248.
  • Step 6
    Remove from fire.
  • Step 7
    Add flavoring and stir until well blended.
  • Step 8
    Pour quickly over nuts which have been placed in well-buttered pan.
  • Step 9
    When cool cut in squares.
