caramel squares, a sees candy knock-off

My son and I love, love, love Sees Caramel Squares. But they are so expensive. So I invented this recipe in order to mimic as closely as I could to that delicious candy. Now it is one of the gifts of boxes of homemade chocolates and candies I make to give away for Christmas. But hey, you can make them any time, not just at Christmas. Beware! They are addicting.

Ingredients

  • 2 sticks butter
  • 2 C brown sugar
  • 1/2 C whole milk
  • 1 t vanilla
  • 3 1/2-4 C powdered sugar
  • If desired - 1-1/2 c pecans
  • 1 C + chocolate chips

How To Make caramel squares, a sees candy knock-off

  • Step 1
    Line an 8X8 pan with foil or parchment paper to make a sling, then spray with cooking spray
  • Step 2
    Melt butter in a heavy saucepan over medium low heat
  • Step 3
    Stir in brown sugar and heat while stirring constantly to dissolve and combine.
  • Step 4
    Gently pour in milk and stirring constantly, bring to a boil
  • Step 5
    Remove from heat and let stand to cool for 1 hour to room temperature, occasionally stirring to make sure it evenly cools
  • Step 6
    Stir in powdered sugar 1/2 C at a time, stirring until combined and then adding another 1/2 C etc., until combined. It should be the consistency of fudge. Add nuts if desired. It will also harden as it settles
  • Step 7
    Spoon into prepared pan and let stand
  • Step 8
    Melt chocolate chips and spread over the top of the fudge. Can top with nuts if desired. Remove from pan. Cut into squares and then put into storage container. Refrigerate until set .
