My Grandma W used to make Buckeyes with rice krispies since I never liked chunky peanut butter. Until I moved to Ohio, it was the only way I knew to make them. Then I had a customer give me this wonderful recipe, and every since (sorry Grandma) I use this recipe instead! Easy, wonderfully delicious, I can't make a single recipe. I typically make 4 batches at a time, then put into a plastic container with waxed paper to separate the layers and stick in the fridge. I even made them for a bus trip I planned, and the passengers were pleasantly surprised!

4 batches made 200, so this should be about 50

How to Make Buckeyes (5 Star)

  1. Mix butter, peanut butter, vanilla and powdered sugar. Dough will look dry. Roll into 1" balls and put on waxed paper lined cookie sheets. Chill in freezer 30 min.
  2. Melt semisweet chips, stirring, until smooth. Dip balls into chocolate, leaving a small portion of peanut butter showing at the top to look like buckeyes. Put back on the cookie sheet and refrigerate until serving.
