Brown sugar fudge from the heart of My Aunt Jessie. She was a wonderful woman and sent me many recipes throughout her short years here on Earth. Posting this recipes honors her and her love for cooking and sharing her love through her recipes. I threw my own spin on it so it is now "our" recipe but when I make this fudge it still makes me smile as if she is right there in the kitchen with me.

Ingredients

  • 2 cups packed brown sugar (light)
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 2/3 cup milk
  • 2 tablespoons light corn syrup
  • 2 tablespoons butter(not margarine)
  • 1/2 cup flaked coconut
  • 1/2 cup ground walnuts

How To Make brown sugar fudge

  • Step 1
    In a heavy saucepan, add sugars and salt. Stir in milk and corn syrup. Boil, stirring constantly. continue to boil without stirring until candy thermometer reads 234^-240^ (soft ball stage)
  • Step 2
    Remove from heat add butter(do not stir) cool to 110^-115^ without stirring. When it reaches that temperature, beat vigorously with a wooden spoon until mixture thickens and begins to lose it's gloss (about 5 minutes)
  • Step 3
    Stir in coconuts and ground walnuts. Mix well. Pour fudge into a buttered 8"x 8" square pan. Cool to room temperature. Cut into squares.
